Opinions on the various so-called "de-farb" services and companies, IMHO, ultimately come down to being subjective based upon the Mental Picture of lads in terms of what they need/want to get out of the "de-farb" for the dollars spent, and what they know or care to know about how much quality work or how many of the problems and weaknesses are addressed compared to the original guns. (With the caveat of what actually can and cannot be fixed on Italian Enfields...)
Remember, for some lads, "de-farbing" is just removing the modern barrel stampings and (previously) replacing the polyurethane stock finish.
"Company Quartermaster" works with an EuroArms or ArmiSport Enfields, but recommends an Armi Sport to "retrovert" back toward a Third Model.
Blueing and Italian simulated color case hardening is removed and the gun finished bright.
Modern barrel stampings are removed, and replaced with the Birmingham Proof House stamps.
The lock has the incorrect stampings removed, and replaced with "Tower" over "1862." The lock has the double line around the edge.
The round ear lock screw escutcheons are replaced with the square ear type.
The stock is not refinished.
Incorrect front and rear swivels are replaced at an extra charge.
The ones I have seen are well done, and I used to be a custom CW gun-builder and 3rd Model Enfield "retroverter" in the Way Back Daze.
I was once going to order one myself a few times, but got distracted by the work of Todd Watts at Blockade Runner, and James River Armory- both of which, IMHO, having "raised the bar" as to "what is out there."
But I am biased. The "best" retroverted Enfields were fifteen or so 1986 vintage EuroArms I radically reworked... 
Of course, others' mileage will vary...
