1851 Colt Navy with Front Sights

I recently bought an EIG Colt Navy from a gun show for $125. It has sights fitted to it, I'm working on uploading some pictures.

Did some officers add custom sights to their revolvers? I'm considering either getting the sights removed or buying a stock barrel.

While one can never say never...

in short: no. (Although one could conceivably pay a gunsmith to replace the factory as issued/sold sights with something else.)

Factory Colt revolvers through the M1862 Pocket/Police typically had either a cone post or a curved profile blade front sight. It has been said that the sight height was set for a 25 yard target. The "rear" sight was a crude "V" notch in the hammer.

That changed Post War with the Richards, and Richards & Mason metallic cartridge conversions of C & B Colts which added a crude rear sight to the top of the conversion ring. For the Model 1871/72 "Open Top" Colts, they added a basic rear sight at the base of the barrel. It proved unpopular, and for the M1873 "Peacemaker" it was eliminated in favor of a grooved top strap and a higher front sight that some lads and gunfighters field down anyways to reduce holster snagging.
